About this bread
A freshly stone-ground White Sourdough available in 600g focaccia-style bread. The flour is made from Organic White Wheat grains grown in Britain. We freshly stone-ground mill the grains in small batches, here at Tablehurst Farm. Our dough goes through a slow fermentation process which improves nutrients' bioavailability, making them easier for the body to absorb. All our bread is baked in our wood-fire oven using local oak, pine and birch logs.
The Falia story
Our Falia Sourdough is a typical bread from the village of Priverno, south of Rome. Its story starts with an Italian lady called Lia who regularly baked bread at home. One day, after her baking she had some extra dough left to use, so she decided to generously add extra virgin olive oil to it, creating a new focaccia-style shape. The name originates from the Italian fare (doing) and her own name Lia. When the people asked who made that delicious focaccia-style bread, the answer was Fa-Lia.
