About this bread
A freshly stone-ground Heritage Sourdough available in 600g and 1000g loafs. The flour is made from Biodynamic Heritage Wheat grains grown at Hungary Lane Farm in Nottingham. We freshly stone-ground mill the grains in small batches, here at Tablehurst Farm. Our dough goes through a slow fermentation process which improves nutrients' bioavailability, making them easier for the body to absorb. All our bread is baked in our wood-fire oven using local oak, pine and birch logs.
Ingredients
Heritage Wheat Stone Ground Flour*^, Wheat Starter*^, Water^, Sea Salt^ (Sal de Guérande). *Biodynamic, ^Natural.
Method
Our Biodynamic Heritage Wheat grains are stone-ground milled into flour. The dough is mixed and left to ferment for at least 19 hours. It is then slowly wood-fire baked in small and large loafs for around 45 minutes, at a temperature between 200°C to 250°C.
