About this bread

A freshly stone-ground Rye Sourdough available in 600g loafs. The flour is made from Biodynamic Rye grains grown here at Tablehurst Farm, freshly stone-ground milled in small batches. Our dough goes through a slow fermentation process which improves nutrients' bioavailability, making them easier for the body to absorb. All our bread is baked in our wood-fire oven using local oak, pine and birch logs.

Rye Stone Ground Flour*^, Rye Starter*^, Water^, Sea Salt^ (Sal de Guérande). *Biodynamic, ^Natural.

Method

Our locally grown Biodynamic Rye grains are stone-ground milled into flour. The dough is hand mixed and left to ferment for at least 19 hours. It is then slowly wood-fire baked in small loafs for around an hour, at a temperature between 180°C to 250°C.
