About this bread

A stone-ground Whole Wheat Sourdough available in 600g and 1000g loafs. The flour is made from Organic Whole Wheat grains grown in Britain. Our Whole Wheat is then mixed with Organic White Wheat flour, here at Tablehurst Farm. Our dough goes through a slow fermentation process which improves nutrients' bioavailability, making them easier for the body to absorb. All our bread is baked in our wood-fire oven using local oak, pine and birch logs.

Ingredients

Whole Wheat Stone Ground Flour*^, White Wheat Stone Ground Flour*^, Wheat Starter*^, Water^, Sea Salt^ (Sal de Guérande). *Organic, ^Natural.

Method

Our Organics Whole Wheat and White Wheat flours combined together. The dough is mixed and left to ferment for at least 19 hours. It is then slowly wood-fire baked in small and large loafs for around 40 minutes, at a temperature between 250°C to 270°C.
